Thai Salad

I had a hankering for a Thai beef salad but without the beef, so I made this. You could add beef and/or noodles to make it a meal on its own, otherwise serve it as a side salad. We ate it alongside some Chicken Pad Thai.



If you want a vegetarian/vegan version, omit the fish sauce.

Preparation Time: 10 minutes
Cooking Time: 0 minutes
Serves: 4-6

Ingredients
250g cherry tomatoes, quartered
1 cucumber, sliced into thin 3cm batons
1 red onion, chopped in half and thinly sliced
1/2 bunch coriander, roughly chopped
4 spring onions, roughly chopped
1 cup mixed leaves

Dressing
1 garlic clove, minced
2cm knob of ginger, minced
1 tbsp soy or tamari sauce
1 tbsp fish sauce
1 tsp sesame oil
Juice of 1 lime

Method
  • Chop the vegetables and place in a salad bowl. Mix well.

  • Stir the dressing ingredients in a small bowl.



  • When ready to serve, add the dressing to the salad and mix well.
