Thatched Bacon Sandwich

Thatched bacon sandwiches are slowly becoming the next big thing. These sandwiches will make eating bacon even more of an enjoyable experience.

Preparation Time: 5 minutes
Cooking Time: 20 minutes
Makes: 4 servings

8 slices Bacon
8 slices fresh bread
8 slices cheese (variable)
1/2 onion (chopped)
4 eggs
Salt and pepper (to taste)
Butter (to spread)

Preheat the oven to 200 degrees Celsius.

Take each slice of bacon and finely cut it into 5 little strips (about 1-1.5cm wide).

Take each strip of bacon and overlap over one another to produce a thatched bacon-like appearance.

Place the thatched bacon in the preheated oven for about 10-15 minutes or till the bacon is cooked enough (by turning dark red with a tinge of a burnt look).

While the bacon is cooking in the oven, prepare the bread by spreading butter on one side of each slice of bread.

Cut up a small onion into fine, little pieces and cook over a stove top (without oil/butter) on high for about 5-10 minutes till they start to turn golden brown.

Fry the eggs in a pan till they are well-cooked.

Once the bacon has been cooked, place the thatched bacon onto the bread, over the fried egg and cheese slice. Top it off with salt and pepper as desired.
