The Eat Your Greens Salad

Here is a simple way to do what mother always told you to and eat your greens. This recipe is enough for two, so simply multiply ingredients for more people.



Preparation Time: 5 minutes
Cooking Time: 0 minutes
Makes: 2 servings

Ingredients
100g Rocket
1 small handful Mung beans
Lug of sunflower oil
Salt and pepper to taste
1 cucumber
Tasty cheese

Method

  • Start off by washing the rocket and placing into the serving bowl. There is no need to dirty extra dishes for this one.

  • Add mung beans to the rocket, then a lug of sunflower oil. Toss sunflower oil onto the rocket leaves and mung beans to coat. This is the vital step that can make or break a salad, so take the time to make sure that all the leaves are sufficiently coated. Once they are, you can add salt and pepper to taste without having to worry about the salt drawing water out of the leaves because the oil acts as a natural barrier to this happening.

  • Diagonally slice the cucumber, this will make it look better and more appetising. Add this to the salad bowl.

  • Slice cheese into appealing looking flakes and top the salad before serving.
