Thick Lemon Pancakes

Last weekend my dad and I were doing the grocery shopping. When we got to the till and I started packing, I found some unfamiliar items. 'Did you put this in here?' I asked, looking at a squeezy container of lemon juice. 'It's for Pancake Day', Dad replied. I never remember when it is Pancake Day; Mum does because she gives up chocolate for Lent, and Dad does because he likes Pancakes; it completely passes me by. At least it would if Dad didn't buy lemon juice and pancake mix. He said he wanted to make pancakes, after which, I told him that we already had lemon juice at home, and we could have just used the tons of flour already stocked in the cupboards. Dad just likes buying food we don't need.

Anyway, around comes Pancake Day, and I wondered when Dad was going to make them because he had gone to bed after work, and was going out in the evening. When it had reached five o'clock, he came down stairs and complained that no one had made him any pancakes. He had never had had any intention of 'making' pancakes. That was apparently my job. I should have known.

So Dad did not get Pancakes on Tuesday. On Friday, however, I had a good idea around what time he would be home from work, so got out the pancake mix and lemon juice. Now the recipe on the packet indicated how many a batch would make, but my dad likes his pancakes extra thick, so I made half the amount and gave them a good dose of the lemon juice and sugar. So here we are, extra thick lemon pancakes that are sure to fill you up. Based on the brands I used, each serving is about 300 calories.

Preparation Time: 10 minutes
Cooking Time: 1 minute/pancake
Makes: 4 servings

125g pancake mix
275ml water
1 large egg
4 tbsp lemon juice
8 tsp Xylitol sweetener (or granulated sugar if you prefer)
2 tsp sesame seed oil


Beat the egg and water together until frothy.

Beat the frothy egg mixture into the pancake mix until smooth.
Heat the sesame seed oil in a frying pan until very hot.

Pour a quarter of the batter into the pan and tip the pan around so that it reaches the sides.

Wait until the bottom of the batter firms up enough so that it can be flipped over, then cook the other side.
Repeat this three more times with the rest of the batter.
Drizzle the lemon juice over the pancakes and sprinkle the sweetener/sugar.
Roll up your pancakes and enjoy.
