This is a classic savoury Taiwanese dish that is easy to make and also super delicious. It's a combination of sesame oil, soy sauce and ShaoXing Chinese wine.



Despite being called 3 cups, it doesn't mean adding one cup each of the condiment. It means adding equal amounts, which is a ratio 1:1:1 of each condiment, depending on the amount of chicken you are cooking.

Preparation Time: 5 minutes
Marination: 20 minutes
Cooking Time: 40 minutes
Makes: 5 servings

Ingredients:
1kg of Chicken wing or Chicken Thigh
7 cloves of Garlic Crushed
7 slices of Ginger
1/3 cup of Sesame oil (preferably Dark Sesame Oil)
1/3 cup of ShaoXing chinese wine (depending on how savoury you want it to be)
1/3 cup of Light soy sauce
1 tbsp of Brown sugar
1/4 cup of Water
Handful of Fresh basil, washed



Method:
  • Cut the chicken wings into smaller pieces to separate the drumsticks and the wings. (If you are using thigh, cut them into smaller pieces).

  • In a large bowl, marinate the chicken you cut for 20 minutes with Sesame oil, Chinese oil and Light soy sauce, give it a good mix and cover them with a cling wrap.



  • Heat up a large pan, add in sesame oil.

  • Add crushed garlic and ginger slices then stir fry them until aromatic.

  • Lay the chicken on the pan and cook them till its golden brown. Repeat the same step on the other side of the chicken. (Keep the remaining condiments you used for marinating the chicken)



  • When both sides are cooked, add in the remaining sauces you used for marinate, and lower the heat. Simmer for 10 minutes. (You could do this by moving the chicken to a large pot if you do not have a cover for the pan).

  • Add washed basil into the pot, give it a stir and simmer again for another 10 minutes.



  • Lastly, add in brown sugar and give it a taste. You could add in more sugar or more soy sauce depending on personal preferences. On high heat, remove the cover and let it cook for another 2 minutes.



  • Garnish with spring onion or fresh basil.
