Three Fruit Yoghurt Muffins

These fruity muffins are great for breakfast on the go, school lunchboxes or a treat for yourself. They are easy to make and you can change the fruit variety to suit your preferences.


Preparation Time: 10 minutes
Cooking Time: 20-25 minutes
Makes: 12

Ingredients
2 1/2 cups SR flour
1 tsp ground cinnamon
1/2 cup brown sugar
2 bananas, mashed
1 tsp vanilla essence
1 egg, lightly beaten
1 3/4 cups yoghurt (plain or flavoured)
1/4 cup vegetable oil
1/2 cup diced strawberries
1 plum, diced

Method
  • Preheat oven to 190C and line your muffin pan with muffin cases.
  • In a large bowl combine the flour, cinnamon, sugar, bananas, vanilla, egg, yoghurt and oil. Stir until just combined. Fold in the strawberries and plums.

  • Divide mixture between the 12 muffin cases and bake for 20-25 minutes.

  • Rest in pan for 2 minutes before transferring muffins to a wire rack to cool completely.
