Tiramisu with Raspberry
The word Tiramisu is Italian for 'pick me up', quite appropriate for this dessert I think. This particular recipe doesn't use cheese or alcohol. However, you can always add the alcohol if you wish.
Extra refrigeration time will be required. This recipe makes 8 individual servings but the quantities can be adjusted to make one big tiramisu. The amount of sponge fingers required will depend on the size of the dish.

Ingredients
397g Carnation Condensed Milk
Trifle sponges
300ml Double cream
Coffee
50g Chocolate
Raspberries
Vanilla flavouring
Method
Grate 50g of chocolate
Choose your serving dish. Then you can decide whether you need to cut the sponge fingers or not.
For the individual portions the sponge fingers were cut
Make 1 small cup of coffee. You can use instant coffee or espresso.

In a large bowl whisk the condensed milk, cream, 2 tsp of the coffee mixture and 1 tsp of vanilla flavouring.
Whisk until the mixture starts to thicken
Briefly dip the sponge into the coffee mixture and place it at the bottom of the dessert cup.
Add 2 tbsp of the cream mixture then sprinkle 1 tsp of grated chocolate.
Repeat the above two steps to make another layer. Then finish it off with a raspberry. This should be refrigerated for at least 2 hours. As the tiramisu cools the flavours infuse together. If you can leave it in the fridge for longer then the result will be much better.
Don't worry if you have extra sponge fingers or cream mixture left over, here is an idea on how to use them.
Add the remaining sponge fingers to the base of a dessert cup or crush some digestive biscuits.
Crush some raspberries with a wooden spoon into the cream mixture and mix well.
Pour this over the sponge fingerscrushed biscuits. Add any extra chocolate and raspberries, refrigerate for a few hours then serve
