Perfect for breakfast, lunch, or afternoon tea, teacakes go best with a bit of butter and
jam. Based on the brands I used, each teacake is about 170 calories.
Preparation Time: 2hrs 40 minutes
Cooking Time: 20 minutes
Makes: 10 servings
Ingredients
500g wholemeal bread flour
100g raisins
50g margarine
300ml almond milk
100ml water
1 1/2 tsp fast action yeast
2 tsp Truvia sweetener (or 2 tbsp caster sugar)
1/2 tsp salt
Method
Mix together the flour, yeast, sweetener/sugar, and yeast
Rub in the butter to create a breadcrumb like texture.
Combine the milk and water, and gradually pour into the mixture to form a dough.
Knead the dough for ten minutes, then prove for about an hour.
Divide the dough into ten, and create flattish saucer size cakes.
Leave to prove for another hour.
Bake in an oven pre-heated to 200 ༠C/ 180 ༠C fan/375 ༠F/5 Gas.
Slice the teacakes in half and grill each side for about one minute.
