Toffee Apple Pudding

An indulgent pudding fit for big families or very greedy people. Each portion is about 288 calories based on the brands I used.

Preparation Time: 35 minutes
Cooking Time: 1 ½ hours
Makes: 8 servings

Ingredients
1 cooking apple
2 eggs
1 tsp vanilla extract
160g soft dark brown sugar
125g self raising wholemeal flour
45g pecans
120g margarine
300g creme fraiche

Method



  • Melt the creme fraiche, 60g margarine, 100g sugar, and vanilla extract in a sauce pan, and stir until fully incorporated.



  • Pour half the toffee sauce into a pudding basin.



  • Chop the pecans an scatter on top of the sauce.



  • Cream the margarine with 60g sugar, then beat in the eggs.



  • Fold in the flour.



  • Core, peel, and chop the apple, and fold into the mixture.



  • Pour the mixture into the pudding bowl and seal it with tin foil.
  • Fill a sauce pan & #8531 ; of the way up with water and bring to the boil.



  • Put in the pudding bowl and simmer of an hour and a half.



  • Tip the pudding out of the bowl.



  • Reheat the remaining sauce, and pour over the pudding.
