Toffee Shards

There are many types of toffee, from soft and chewy to very brittle. Some are just eaten as sweets, while others, like spun toffee is used to decorate desserts. Toffee shards is suited for both. Delicious to eat by itself and adding a bit of flare when wedged into a scoop of ice cream, or placed on top of a fine pastry.

Preparation Time: 10 minutes
Cooking Time: 10 minutes
Makes: Approximately 320g

Ingredients
80g margarine
150g muscovado sugar
4 tbsp wild flower honey
1 tbsp white wine vinegar
1 ½ tsp chocolate extract (or any flavouring of choice)

Method



  • Mix all of the ingredients (except the chocolate extract) in a heavy based saucepan, and put at a low heat until melted.



  • Increase the temperature and bring to the boil, then allow to simmer for ten minutes (do not stir).



  • Pour the molten toffee onto a silicon baking sheet and spread it with a silicon spoon.



  • Allow the toffee to cool and harden, then break it into shards.
