Tofu Vegetable Pie

This is a healthy and delicious vegetarian pie, perfect for the cooler weather. It is a bit rustic and chunky but that is what makes it special. You can find the Shitake mushrooms in the Asian section of most supermarkets - they are very nutritious and add a great flavor to the pie.

Tofu Vegetable Pie

Preparation Time: 45 minutes
Cooking Time: 50 minutes
Makes: 8 servings

150 grams fresh firm tofu
4 dried Shitake mushrooms
1 cup filtered water
1 tablespoon olive oil
2 diced carrots
2 peeled and diced potatoes
2 diced sweet potatoes
1 leek
1 cup vegetable stock
2 - 3 sheets frozen shortcrust pastry

1 cup soy milk
4 teaspoons cornflour
1 teaspoon dried herbs (thyme/sage)

Boil 1 cup of filtered water and add the dried Shitake mushrooms. This will be the tofu marinade. Let the mushrooms sit in the water for 15 minutes, before removing the mushrooms.

Chop the tofu into small cubes and place them in the Shitake Mushroom marinade for one hour.

Cook the vegetables

Fry the leek in the olive oil and add the diced carrots, potatoes and sweet potatoes.

Add the vegetable stock and continue cooking for 20 minutes.

Add the tofu (set aside the marinade) and cook on low for 5 minutes further.

Arrange the pastry in a pie dish

Prepare the sauce - take the Shitake Marinade and add the cornflour, dried herbs (thyme/sage) and soy milk.

Add this to the vegetables and stir continuously for 5 minutes.

De-frost the shortcrust pastry and place it in a well greased pie dish. Blind bake in a moderate oven for 5 minutes before adding the vegetable/ tofu mixture.

If you're feeling creative, add some decorations to the pie "lid" made from any leftover pastry.

Bake in a moderate oven for 50 minutes or until the pastry is golden all over.
