Tom Kha
A variant on Tom Yum, with added coconut milk this is a less spicy alternative that still has a fabulous depth of flavour.

Ingredients
Vegetable stock
Small ½cm piece galangal
10 thin slices of lemongrass
3 shallots, crushed
2 kaffir lime leaves
Oyster mushrooms
½ ripe tomato in wedges
Tamarind sauce
1 cup coconut cream
3 Small chillies crushed
5-6 chunky pieces soft tofu (optional)
Sprig coriander
Method
Take 1 ½ cups of vegetable stock and bring to the boil.
Add the rest of the ingredients to warm through.
Serve the coriander on top.
