These tomato, basil and feta bites are so simple and so delicious. Great to serve on a vegetarian platter or a quick snack to tie you over until dinner.

Ingredients
1-2 tomatoes
10-20 Basil leaves
320 g soft marinated feta cheese
Cracked black Pepper to season
Garlic olive oil
Cashew cheese (For Vegan option)
Method
Cut tomatoes into wedges I get about eight to ten from one large tomato

This is how I cut my tomato wedges
Slice off some cheese And spread a generous amount of cheese onto one side of each tomato
Season with some cracked black pepper
Place one fresh basil leaf on top
To serve place on a serving plate and finish off with a drizzle of garlic olive oil
For vegan option spread cashew cheese on each instead of feta cheese.
