Tomato and Mackerel Fry Up

A good fry up is a traditional start to the day, but this one is slightly different from your Full English. It is a good 'all day breakfast' that can also be enjoyed at lunch or tea.

Preparation Time: 10 minutes
Cooking Time: 10 minutes
Serves: 1-2

Ingredients
2 smoked mackerel fillets
3-4 small salad tomatoes
1 spring onion
1 small brown onion
40 g Haloumi cheese
1 tsp coconut oil

Method
  • Dice the onion and spring onion and start frying in coconut oil.
  • Slice the tomatoes and Haloumi, and stir in.

  • Flake the mackerel, then stir in.

  • Stir until the onions and Haloumi have turned golden brown, and serve.
