Tomato Bruschetta

These bruschetta are a little different from the usual; you certainly won't regret giving them a try.

They are also very simple to make and a healthy breakfast that students can afford to make too.

Preparation Time: 5 minutes
Cooking Time: 3-5 minutes
Makes: 2 large servings

10 Cherry Tomatoes
1 Medium Red Onion
200g Feta Cheese
Basil Pesto (Homemade or store bought)
Balsamic Glase
Bread base - burger bun, thick slices of bread or most kinds of rolls! Think creative!

Wash the cherry tomatoes and peel the red onion.

Dice the cherry tomatoes and red onion and mix into a small bowl together.

Lightly grill/toast your choice of bread (which was will vary depending on the type chosen).

Crush feta with a fork, until it gives a crumbled appearance.

Once your bread is toasted place on a plate and thinly spread pesto onto the bread.

Sprinkle the diced cherry tomatoes and red onion on top of the bread evenly.

Lightly add the feta on top of the cherry tomatoes and red onion.

Finish by dressing with balsamic glaze.
