Tomato egg curry

The egg curry is so delicious and tempting. When we are busy, we usually limit our breakfast to some toast and butter or cereals. Instead, try making this easy egg curry with tomato gravy and serve it as a side dish for bread.

You can even prepare the gravy one day ahead and refrigerate it. Just heat the gravy in the morning and add the eggs just before serving.

Preparation Time: 15 minutes
Cooking Time: 20 minutes
Makes: 4 servings

4 hard boiled eggs
2 tomatoes
1/2 red onion
1/4 cup coconut milk
1/4 cup water
1 tbsp crushed ginger
1 tsp garlic paste
1/2 tsp fennel seed
2 cloves
1/4 tsp coriander powder
1/4 tsp cinnamon powder
1/4 tsp turmeric powder
1/2 tsp chili powder
1 tbsp olive oil
Curry leaves
Salt to taste

Chop the tomatoes and onion.

Heat oil in a pan. Crackle the fennel seeds and cloves. Add the crushed ginger and garlic paste and stir well. Saute the onion on medium heat until translucent. Then add turmeric powder, chili powder, coriander powder, cinnamon powder and curry leaves. Stir-cook for few seconds.

Add the chopped tomato, water and salt into the pan. Stir and cook until the tomatoes can be mashed.

Now reduce the flame to low and add the coconut milk into it. Mix well and cook until warm. Do not bring to boil or the milk will start to separate.

Remove from heat. Add the boiled eggs into the tomato gravy.

Serve hot. Enjoy a spicy breakfast.
