Tomato Fruit Chutney

This is a great chutney for spreading on sandwiches or to serve with cheese, eggs or cold meats. It is so easy to make and hasn't got any added preservatives.

Preparation Time: 15 minutes
Cooking Time: 60 - 80 minutes
Serves: makes 500 ml

Ingredients
1/2 brown onion, finely diced
1 400 g can diced tomatoes
1 tablespoon sultanas
1 large red chilli, finely diced
1 red apple, finely diced
1/4 cup white vinegar
1/4 cup brown sugar
2 whole cloves
1/4 teaspoon cinnamon
5 black peppercorns
1/2 teaspoon salt to taste
1 tablespoon olive oil



Method
  • In a sauce pan, heat the oil to a medium heat.
  • Add the onion, apple and chilli to the pan. Saute for 3 - 5 minutes, until the onion is translucent.
  • Put in the spices, salt and sultanas and cook until fragrant, around 2 minutes.



  • Turn the heat down to low, add the tomatoes, sugar and vinegar. Simmer gently for 60 - 80 minutes, stirring occasionally.



  • When the mixture is thick, pour into a sterilised jar and seal.
  • Serve as an accompaniment for cheese, bread and meats.
