Tomato Mascapone and Chicken Pasta Bake
This simple, sweet-tasting pasta bake is a perfect midweek meal for the whole family. This is the basic recipe but it's very versatile; I sometimes add cooked mushrooms, peppers, courgette, bacon or sweetcorn.

Cooking Time: 40 minutes
Makes: 6 servings
Ingredients
450g pasta, cooked
400g passata
1 large onion, finely chopped
1 clove garlic, crushed
2tbsp tomato purée
250g mascapone
250g cheddar cheese, grated
4 chicken breasts, cooked and chopped into small chunks
2tsp Italian herbs
Pepper to season
1tsp oil
Method
Preheat the oven to 180C (160C for fan ovens). Heat the oil in a sauce pan and cook the chopped onion and garlic for a few minutes until soft.
Add the tomato purée and Italian herbs and cook for a further minute.
Stir in the passata and simmer for 10 minutes before adding the cooked chicken. Season with a little pepper, stir in the mascapone and cook for a further 5 minutes.
Mix in the cooked pasta and transfer to a baking dish.
Sprinkle the grated cheddar cheese over the top and season with a little pepper.
Cook for 20-30 minutes, until the cheese is golden.
