Tomato Stuffed Herring
A rich flavoured oily fish, herring is full of omega 3 and a source of vitamin D. Its relatively small size makes it perfect when only wanting to cook a meal for one.
Preparation Time: 10 minutes
Cooking Time: 30 minutes
Makes: 1 serving
Ingredients
1 herring
1 tomato
½ tbsp vegetable oil of choice
1 tsp lemon juice
1 tsp soy sauce
Ground black pepper, to taste
Method
Slice down the cavity of the fish.
Slice the tomato and place the slices inside the fish.
Mix together the oil, lemon juice, soy sauce, and pepper, then rub over the fish.
Cover in tin foil and bake in the oven.
