Tomato Stuffed Herring

A rich flavoured oily fish, herring is full of omega 3 and a source of vitamin D. Its relatively small size makes it perfect when only wanting to cook a meal for one.

Preparation Time: 10 minutes
Cooking Time: 30 minutes
Makes: 1 serving

Ingredients
1 herring
1 tomato
½ tbsp vegetable oil of choice
1 tsp lemon juice
1 tsp soy sauce
Ground black pepper, to taste


Method
  • Pre-heat the oven to 200 & #3872 ;C/ 180 & #3872 ;C fan/350& #3872 ;F/6



  • Slice down the cavity of the fish.



  • Slice the tomato and place the slices inside the fish.

  • Mix together the oil, lemon juice, soy sauce, and pepper, then rub over the fish.

  • Cover in tin foil and bake in the oven.
