Tomato, Thyme & Goats Cheese Tart

A tasty light meal, delicious served hot or cold

Tomato, thmye, goats cheese, tart

Preparation Time: 20 minutes
Cooking Time: 55 minutes
Makes: 4 servings

1 x 375 packet fresh puff pastry
725g tomatoes, thinly sliced
150g goats cheese
4 x tsps chopped fresh thyme
1 x clove garlic, peeled and crushed
1 x tbsp olive oil, to drizzle

Preheat the oven to 190 degrees
Roll out the pastry onto a ready-greased baking tray
Take a sharp knife and score a line on the pastry about 2 cm from the edge all the way around, to create a frame effect
Place the garlic, goats cheese and thyme into a bowl and mash together with a spoon until well mixed and a paste is formed
Spread the paste with the bottom of a spoon or a knife over the pastry, keeping in even and within the 'frame' created by the knife scoring
Place the sliced tomatoes in rows on top of the goats cheese mixture
Drizzle the olive oil over the top
Bake in the oven for 55 minutes or until the pastry is golden brown, being careful not to burn it and ensuring that the pastry is cooked all the way through. (It is recommended that you use the middle shelf)
Cut into squares and serve with a green salad
