Traditional Anzac Biscuits Coconut Free

Anzac biscuits are deliciously sweet and crunchy biscuits that are an Australian classic. These days most recipes are a lot sweeter than this one and contain coconut, but coconut was not included in the early recipes. This recipe was published in the Capricornian (Rockhampton, Queensland) on Saturday, 14th August 1926.


Preparation Time: 10 minutes
Cooking Time: 15 minutes
Serves: 20

Ingredients
2 cups rolled oats
1/2 cup sugar
1 cup plain flour
1/2 cup melted butter
1 tbs golden syrup
2 tbs boiling water
1 tsp bicarbonate soda

Method
  • Preheat oven to 160C and line two baking sheets with baking paper.
  • Combine the dry ingredients in a bowl and mix.

  • Mix the golden syrup, water and bi carb soda until they froth. Add the melted butter and mix well.

  • Add the butter mixture to the oat mixture and stir to combine.
  • Place teaspoonfuls of mixture onto your baking tray allowing room for spreading.

  • Bake for 15 minutes until golden.
  • Leave to cool on tray for 5 minutes before transferring to a wire rack to cool completely.
