TrayBaked Chicken

Here's an easy way to turn everyday ingredients into a filling meal for the whole family.



Preparation Time: 5 minutes
Cooking Time: 45 minutes
Makes: 5 servings

Ingredients
6 chicken thighs
1 red onion
2 garlic cloves
1 tin of chopped tomatoes
1 sprig/dried thyme
All Purpose Seasoning
1 potato
1 sweet potato


Method
  • Remove the skin from the chicken thighs and place in a frying pan on a medium heat for 10 minutes.

  • Chop the garlic and add to the pan of chicken.



  • Chop the onion.



  • Add the onion to the pan and leave to brown for 5 minutes.



  • Peel and chop the potatoes into chunks and place in a saucepan of boiling water for 10 minutes.

  • Allow the chicken to become golden.



  • Chop the pepper and add to the pan, stir and cook for a further 5 minutes.



  • Transfer the chicken, potatoes and vegetables to a baking tray and add the tin of tomatoes.



  • Place the baking tray in the oven for 30 minutes at 200 degrees/gas mark 6.

  • Remove the chicken from the oven, and once it has become a deep golden brown your meal is ready.
