Triple Choc Muffins With Vanilla Frosting

I've fiddled with this recipe over the years, adding more cocoa, chopped Jersey caramels, fresh raspberries. Eventually I realised that they're very good a la naturale. I'm unsure of its origins, it's been in my recipe book for years!

I've used a smaller sized patty pan for this lot, usually this recipe makes 12 regular sized muffins.

Preparation Time: 10minutes
Cooking Time: 20 minutes
Makes: 12 servings

Ingredients
MUFFINS
100 gm butter (melted)
2 1/2 cups self raising flour
1/2 cup cocoa
3/4 cup caster sugar
1 egg
1 1/3 cup milk
200gm white chocolate bits (or 1 block cut into chunks)
100 gm milk chocolate bits (as above)
FROSTING
150gm cream cheese
3/4 cup icing mixture
Vanilla essence


Method
  • Turn the oven on to 180c, grease muffin tin
  • Place all the dry muffin ingredients into a bowl and then gently mix in the wet. Do not over mix!


  • Add the chocolate (or any other treats) and mix to combine.



  • Place enough mixture into each patty pan to 3/4 fill it.


  • Place in the oven for 20 -25 minutes until just cooked. Allow to cool before icing.


  • FROSTING
  • Beat cheese until soft, add sugar and vanilla and beat until smooth.
  • Spoon the frosting on the muffin but do not smooth.
