Triple Choc Muffins With Vanilla Frosting
I've fiddled with this recipe over the years, adding more cocoa, chopped Jersey caramels, fresh raspberries. Eventually I realised that they're very good a la naturale. I'm unsure of its origins, it's been in my recipe book for years!
I've used a smaller sized patty pan for this lot, usually this recipe makes 12 regular sized muffins.

Preparation Time: 10minutes
Cooking Time: 20 minutes
Makes: 12 servings
Ingredients
MUFFINS
100 gm butter (melted)
2 1/2 cups self raising flour
1/2 cup cocoa
3/4 cup caster sugar
1 egg
1 1/3 cup milk
200gm white chocolate bits (or 1 block cut into chunks)
100 gm milk chocolate bits (as above)
FROSTING
150gm cream cheese
3/4 cup icing mixture
Vanilla essence
Method
Turn the oven on to 180c, grease muffin tin
Place all the dry muffin ingredients into a bowl and then gently mix in the wet. Do not over mix!
Add the chocolate (or any other treats) and mix to combine.
Place enough mixture into each patty pan to 3/4 fill it.
Place in the oven for 20 -25 minutes until just cooked. Allow to cool before icing.
FROSTING
Beat cheese until soft, add sugar and vanilla and beat until smooth.
Spoon the frosting on the muffin but do not smooth.
