Triple Chocolate Cookies
This recipe makes a rich dark chocolate cookie that is crunchy on the outside and melt in the mouth.
Preparation Time: 10 minutes
Cooking Time: 15 minutes
Makes: 60 pieces
Ingredients
250g 70% dark chocolate, roughly chopped
300g oat flour, sieved
60g cocoa powder, sieved
2 teaspoons bicarbonate soda
1 teaspoon salt
250g butter, room temperature
150g brown sugar
100g caster sugar
2 large eggs, cold from the fridge
150g dark chocolate chips
150g milk chocolate chips
Method
Preheat the oven to 170C. Place the dark chocolate pieces in a heatproof bowl and melt in microwave.
Put the oat flour, cocoa, bicarbonate soda and salt into a bowl. Mix until well combined.
Place the butter in a mixer bowl and beat until creamy.
Add in the brown sugar and caster sugar, continue beating until well combined.
Pour in the melted chocolate and mix.
Crack both of the eggs in and beat until combined.
Slowly add in the dry ingredients and continue mixing on low speed until combined.
Finally, stir in the dark and milk chocolate chips with a spatula.
Use 2 teaspoons to scoop out equal-sized mounds on to a baking tray about 5cm apart. Do not flatten them.
Bake for 10 minutes for a chewy gooey cookie or 5 minutes longer for a crispy cookie. Leave to cool slightly on the baking sheet for 5 minutes then carefully transfer to a cooling rack to harden as they cool.
