Triple Chocolate Cookies

This recipe makes a rich dark chocolate cookie that is crunchy on the outside and melt in the mouth.



Preparation Time: 10 minutes
Cooking Time: 15 minutes
Makes: 60 pieces

Ingredients
250g 70% dark chocolate, roughly chopped
300g oat flour, sieved
60g cocoa powder, sieved
2 teaspoons bicarbonate soda
1 teaspoon salt
250g butter, room temperature
150g brown sugar
100g caster sugar
2 large eggs, cold from the fridge
150g dark chocolate chips
150g milk chocolate chips



Method
  • Preheat the oven to 170C. Place the dark chocolate pieces in a heatproof bowl and melt in microwave.



  • Put the oat flour, cocoa, bicarbonate soda and salt into a bowl. Mix until well combined.



  • Place the butter in a mixer bowl and beat until creamy.



  • Add in the brown sugar and caster sugar, continue beating until well combined.





  • Pour in the melted chocolate and mix.



  • Crack both of the eggs in and beat until combined.



  • Slowly add in the dry ingredients and continue mixing on low speed until combined.



  • Finally, stir in the dark and milk chocolate chips with a spatula.



  • Use 2 teaspoons to scoop out equal-sized mounds on to a baking tray about 5cm apart. Do not flatten them.



  • Bake for 10 minutes for a chewy gooey cookie or 5 minutes longer for a crispy cookie. Leave to cool slightly on the baking sheet for 5 minutes then carefully transfer to a cooling rack to harden as they cool.
