Triple Deck Lemon Slice

Zesty, irresistible, triple deck slice is delicious with lemon and coconut. Each layer has lemon zest and/or juice to make this tasty slice.

This is a great dessert for parties, homemade high teas or as a Mother's or Father's Day treat. It is low FODMAP, gluten and lactose free.

Triple Deck Lemon Slice
This delicious slice is zesty with fresh lemon

Preparation Time: 15 minutes
Cooking Time: 50 minutes
Serves: 1 slice, 16 pieces

For the base layer
1 cup dessicated coconut
1 cup flour (gluten free if required)
2 tbsp coconut oil
1 tbsp vanilla essence
2 tbsp maple syrup
1 tbsp water
1 tbsp lemon zest

For the middle layer
1 lemon, juiced and finely zested
2 eggs
1 1/2 cups milk (lactose free if required)
1/4 cup desiccated coconut
1/4 cup flour (gluten free if required)
1/4 tsp baking powder
1 cup caster sugar
1 tbsp vanilla essence
1/3 cup coconut oil, melted (nuttelex if lactose free required)

For the top layer
4 eggs
1 lemon, juiced and finely zested
1/3 cup flour (gluten free if required)
1 cup caster sugar
Icing sugar, to dust

Preheat the oven to 180 degrees. Line a 21 cm square dish with baking paper.
In a bowl combine the base ingredients. Press firmly into the dish.

Bake for 10 - 15 minutes until firm and slightly brown.
Cool completely in the dish.
Whisk the middle layer ingredients until combined. Pour onto the base.

Pour the middle layer onto the base

Bake for 20 - 25 minutes until brown and cooked through. Cool for 10 minutes.
Whisk the top layer ingredients until combined. Pour onto the middle layer and bake for 10 - 15 minutes until golden brown and just set.
Cool, dust with icing sugar, cut to desired size.
