Triple Decker Sweet Apple Pancake
Can’t decide what to do with those old apples slowly deteriorating in the fruit basket? If so, read on my friend. Apples and pancakes are about to get married.

Makes: 6 servings
Ingredients
Pre-cooked thin 8-inch wide pancakes (you may make them yourself using milk, flour, eggs, sugar, vanilla- modifying ingredients for gluten/diary free/diabetics)
One apple, medium/large, any variety (pink lady works well)
Golden Syrup
Sugar
Butter
Cinnamon powder
Method
Wash your apple, peel it if you like, keeping the skin will give it a nice crunch.
Cut the apple into small cubes, about 1 inch size
Melt a tablespoon of butter in a saucepan and add the apples, along with ½ teaspoon of cinnamon powder, 1 tablespoon golden syrup, and 1-2 tablespoons of sugar depending on how sweet you like it.
Stir on medium heat.
While the apples are cooking, in a non-stick frying pan, melt some butter and gently warm the pre-cooked pancakes on medium heat, till both sides soften.
Check on the apples, cooking them for ten minutes or less, until they are slightly brown, caramelised, and softened, tending towards a sticky consistency, then you know they’re done.
When you’ve cooked the pancakes, start to assemble. Use one pancake as the base. Then add half of the apple mixture, spreading evenly over the pancake. Then add another pancake, then the rest of the apple mix onto it. Then layer the final pancake on top.
Cut six slices. Now it’s time to eat, Bismillaah!
