Tropical Island Cake

This fatless upside down sponge cake is made with lots of fresh fruit for a very tropical experience. Based on the brands I used, each slice is about 188 calories.

Preparation Time: 1 hour
Cooking Time: 35 minutes
Makes: 8 servings

Ingredients
250g wholemeal flour
125g Truvia sweetener (or caster sugar if you prefer)
3 eggs
1 tsp bicarbonate of soda
85g mango
85g pineapple
2 bananas
2 passion fruit
2 kiwis
1 orange

Method
  • Pre-heat the oven to 180 & #3872 ;C/ 160 & #3872 ;C fan/350 & #3872 ;F/4 Gas.



  • Mix the flour and bicarbonate of soda, and half the sweetener/sugar together.
  • Separate the eggs and beat the yolks.



  • Mash the bananas and mango together, then mix in the passion fruit pulp.



  • Chop the pineapple into small chunks and mix in.



  • Zest and juice the orange, then add the zest to the rest of the fruit.



  • Pour the orange juice into the egg yolks, then beat the mixture into the fruit.



  • Fold the flour into the mixture.



  • Whisk the egg whites with the remaining sweetener/sugar to form soft peaks, then fold it into the mixture.



  • Peel and slice the kiwis, then place them at the bottom of a cake tin.



  • Pour the cake mixture on top.



  • Bake the cake in the oven.



  • Once cooled, turn the cake out upside down, so the kiwis are on the top.
