If you've never thought to blend papaya into a smoothie, you're in for a treat with this recipe.

Papayas used to be quite hard to come by in Australia but now they are available at most fresh food markets and all Asian markets. I picked this one up at my local farmers market for just $2.

Preparation Time: 5 minutes
Cooking Time: 0 minutes
Makes: 1 serving

Ingredients
1 papaya
1 banana
1 mango
400 mls coconut water (or coconut milk)
1 lime
2 tbsp coconut shavings

Method
  • Peel the papaya and deseed. You want the papaya to be super ripe for maximum sweetness. The skin should be spotty and look almost spoiled. Just like you want spotty bananas for optimum digestion.

  • Add the papaya to a blender with the banana, mango, juice of one lime, coconut water and 1 tbsp of coconut shavings. Blend until smooth.

  • Pour into a tall glass or jar and top with the remaining coconut shavings.

  • If your fruit isn't cold add a few iced cubes to your blender to cool it right down.
