Truffle Honey Gnocchi

Ahh glorious gnocchi, the most indulgent style of pasta in my eyes. I fell for it when eating bowls of it in Venice at Christmas in 2014. I've since been addicted. But instead of a heavy cheese sauce, I've gone for a much lighter, but punchy and still indulgent bowl of gnocchi.

Preparation Time: 2 minutes
Cooking Time: 2 minutes
Makes: 2 servings

Ingredients
50g fresh potato gnocchi
Handful of fresh spinach
5 parsley leaves
3 sprigs of fresh thyme
Olive oil
Truffle honey

Method
  • Add the gnocchi to a pan of salted boiling water for no more than 2 minutes, for al-dente pasta.


  • Wash and tear the greens and herbs.



  • Add the spinach to a bowl and immediately dress in the oil. Season and add the rest of the ingredients.



  • Drizzle with the truffle honey and serve.



  • This is extremely moreish. I know this serves two, but don't worry if you'd rather enjoy it alone.
