Tuna and Sweetcorn Casserole

Every time I make this casserole I am asked for the recipe. If you have unexpected guests arriving, and you need a quick dish, this is the recipe for you. It is a favourite over all age groups.



Preparation Time: 10-15 minutes
Cooking Time: 10-15 minutes
Makes: 6 servings

Ingredients
1 tablespoon butter or oil of your preference
1 onion (chopped)
2 tablespoons plain flour
1/3 litre milk
Small teaspoon basil
Pepper and salt to your taste
1 x 425g tuna
1 x 420g creamed corn
Breadcrumbs
Grated cheese
2 tomatoes - cut into 1/4's or 1/8ths
Parsley for garnish


Method
  • Heat oven to 160 degrees C.
  • Melt the butter or heat the oil in large saucepan.
  • Add the chopped onion, basil, salt and pepper and cook until the onion is clear.
  • Add the plain flour and milk.
  • Stir immediately and keep stirring until the sauce thickens. Make sure the mixture doesn't stick to the bottom of the saucepan.
  • Take the saucepan off the stove, add the tuna and creamed corn.
  • Mix well.
  • Turn the mixture into a casserole and sprinkle with breadcrumbs, then grated cheese.
  • Garnish with pieces of tomato and parsley.
  • Put in oven to melt cheese and cook tomatoes.

  • Can be served with salad, toast or peas.
