Tuna Beans Red Rice

This easy rice dish is Mexican inspired and perfect for filling bellies on those cold winter nights.

Bowl or warmth


Preparation Time: 10 minutes
Cooking Time: 30 minutes
Makes: 6 generous servings

Ingredients
2 C long grain rice
800gm Diced tomatoes
400gm 4 bean mix
370gm tuna
1 shallot
2 garlic cloves
1 red chilli
1/2 C stuffed green olives
1 TBSP oil

Method
  • Cook diced shallot, garlic and chilli in oil until they are beautiful and brown.

  • I used the oil my olives were floating in for extra flavour.


  • Pour in diced tomatoes, beans and tuna and bring to the boil.



  • Slice green olives in half and toss them into the pan.

  • Pour in the two cups of long grain rice and combine.

  • Turn the heat down low and cover the rice mixture with hot water.

  • Stir every few minutes until the rice is cooked and sauce has thickened.

  • Add water as needed until the rice is soft.

  • Mountains of delicious fluffy rice.


  • Serve with sour cream and avocado for a Mexican feast.

  • Top with whatever you like
