Tuna Curry in a Rice Nest
This has got a lovely taste and is quite impressive looking too.
You can vary the amount of curry you use, and the amounts here are mild to medium.
Preparation Time: 15 minutes
Cooking Time: 60 minutes
Serves: 12 slices
Ingredients
50 g onions, grated
1¼ cups white rice
1 egg
2 egg whites
4 tbsp parsley, chopped
425 g can tuna, drained
2 tbsp butter
1½ tbsp plain flour
1 tbsp curry powder
1¼ - 1½ cups milk of choice
120 g yogurt
2 tsp lemon juice
75 g cheese, grated
Method
Line an 18 x 28 cm ovenproof dish with baking paper.
Boil the grated onion with the rice as per packet instructions - I use a low GI rice.
Drain the rice if necessary, and put it in a bowl.
Lightly beat the egg and add it to the rice.
Add 2 tbsp of the parsley, and salt and pepper to taste.
Press this mixture into the ovenproof dish and up the sides of the dish, thereby forming a "nest".
Spread the flaked tuna over this in the hollowed out section of the nest.
Meanwhile melt the butter, and stir in the flour - I used the same pot that I boiled the rice in! Add the curry powder and cook for about a minute.
Take it off the heat and gradually stir in the milk. Add the yogurt back on the heat, and bring to the boil.
Boil for about 5 minutes or until it thickens up.
Pre heat the oven to 180°/160° if fan forced.
Take the sauce off the heat and add the lemon juice and the remaining parsley.
Allow this to cool for a bit, and then stir in the egg whites, and salt and pepper to taste.
Pour this sauce over the tuna, sprinkle with the cheese.
Bake for about 30 minutes or until golden.
Let stand for a few minutes, cut and serve.
Can be made ahead, as is also nice heated up.
