Tuna Spaghetti Bolognese

I don't eat meat that often so decided to make a bolognese using a tin of tuna.

The result was excellent and one I will be repeating!

Preparation Time: 10 minutes
Cooking Time: 25 minutes
Serves: 3

Ingredients
1 large tin tuna in springwater
200 g mushrooms, sliced
½ onion, chopped
400 g tin tomatoes
1 tsp sugar
Parsley, chopped
Bit of celery, sliced
Bit of chilli paste - optional
60 g olives, sliced - optional
About ¼ cup Parmesan cheese
About 100 g spaghetti of choice

Method
  • Boil the water and cook the spaghetti as per packet instructions.

  • Meanwhile fry the onions in a wok with some oil.

  • Add the mushrooms, sugar, olives, parsley, tomatoes and celery.


  • Cook for about 5 minutes and then add the drained tuna. Cook for another 5 to 10 minutes until the liquid has thickened or evaporated slightly.

  • Strain the spaghetti, and add to the wok.


  • Serve and top with grated Parmesan.
