Turkey and Egg Scramble

Turkey is one of the leanest readily-available meats out there. Combine it with low calorie eggs and it's a body builder's heaven.



Preparation Time: 10 minutes
Cooking Time: 20 minutes
Makes: 2 servings

Ingredients
2 Eggs
Diced Turkey Thigh (fillet will do)
Half Tsp Black Pepper
2 Carrots
Tsp Dried Chives
Olive Oil
Tsp Thyme

Method
  • Peel and slice the onion finely.



  • Add the onion to a frying pan with a splash of olive oil and leave to cook for 7 minutes on a low heat/until clear (not golden).

  • 'Top and tail' the carrots.



  • Place the turkey in a bowl and add all the seasoning, ensuring each piece of meat is coated.



  • Leaving the skin on the carrots grate over the turkey.



  • Add the turkey mixture to the frying pan. Sear the meat then turn the heat to a simmer.



  • Add 200ml of water to the frying pan to tenderise the meat. Cover with a lid for 15 minutes.

  • Place the green beans in a saucepan of cold water, turn the heat to the boil, then simmer for 5 minutes.



  • The water will have reduced and you should be left with a relatively 'dry' frying pan.



  • Remove the turkey and greens beans from the heat and plate up.



  • In the remaining slightly-moist frying pan, scramble an egg for a filling protein-rich meal.

  • Add the scrambled egg to the turkey and green beans dish and your post-workout meal is served.
