Turkey and Vegetable Stir Fry
Cook this stir fry for an easy and tasty weeknight meal. It feeds the family and is a great way to incorporate plenty of fresh vegetables! I use the Coconut Amino sauce as it is low in sodium and sugar. If you are looking for an alternative try a combination of oyster and soy sauce, half and half.

Serves: 4-6
Ingredients
Salt and pepper
1 Tbsp coconut oil
1 clove garlic, diced
1 onion, diced
8 cups chopped vegetables (I used mushrooms, capsicum, broccoli, cauliflower and pumpkin)
500g turkey mince
1 packet Hokkien noodles
1/3 cup BBQ Coconut Amino sauce (or alternative sauce as suggested above)
Handful coriander, diced
Method
Chop vegetables.
In a pot bring some water to the boil. Steam or boil the broccoli, cauliflower and pumpkin for 5-7 mins and set aside. These vegetables will take a long time to cook in the pan therefore it is easier to steam them then mix them through at the end.
Steamed Vegetables
Meanwhile, heat the coconut oil in a fry pan on a high heat. Add the garlic and onion cooking for 1-2 mins till soft.
Add the remaining vegetables to the fry-pan, cooking for a few minutes till softened.
Cooked vegetables ready to add the mince
Add the mince, stirring until the turkey has browned.
At the same time empty the noodles into a bowl and cover with boiling water. Let sit for 2 minutes and drain.
Prepare noodles
When the turkey has browned add the steamed veggies, noodles, sauce and coriander. Season generously with salt and pepper. Stir to combine and cook for 1 minute to heat the sauce. Add more sauce to taste if required.
Stirring through remaining vegetables, noodles, sauce and herbs
