Turkey Bacon and Brie Club with Chunky Guacamole and Grapes
I had some left over turkey steak in my freezer so decided to make a very yummy club sandwich accompanied by chunky guacamole, mixed with peaches and grapes.
You could buy sliced turkey from a deli, however I think the thicker turkey steak, cooked yourself, is nicer and does not have all the preservatives of sliced turkey.
This was a very filling meal as the club sandwich was rather large!

Makes: 2 servings
Ingredients
For the turkey club
1 turkey steak, cut in half if thick
6 slices of bread (I used light rye)
4 rashers short cut bacon
75 g Brie, sliced
3 tsp cranberry sauce
2 tbsp mayonnaise
2 - 3 Cos lettuce leaves, torn
For the chunky guacamole
1 avocado
½ chili, seeded and chopped
1 lime, juiced
1 green shallot, finely diced
1 tbsp coriander leaves and stems
1 peach, diced
Very small handful red grapes, cut in half
Salt and pepper, to taste
Method
For the Club sandwich
Cook the turkey steaks until just done -do not overcook or they will be tough.
Toast the bread on both sides.
Fry the bacon until it is crisp.
Lay the cooked bacon on two slices of bread, and top with the Brie.
Put this under a grill and melt slightly.
Top with another slice of the toast and spread this with the cranberry sauce.
Add a slice or two of the cooked turkey to each.
Put the lettuce on top.
Put quite a thick layer of mayonnaise on the last piece of toast, and put this on top (mayo side down).
Cut into halves or quarters, ready to serve -you may need to put a toothpick through to keep it assembled.

On the serving plate
For the guacamole
Add the lime juice and roughly mash the avocado.
Add the remaining ingredients, and stir to combine.
Serve with the club sandwich.
