Turkey Meatball Pasta Bake

I love that pasta bakes allow you to make everything ahead of time and then pop it in the oven when everyone's ready for dinner. And the cheddar and parmesan topping makes for a lovely, crunchy bite which adds texture and a delicious flavour.

Preparation Time: 20 minutes
Cooking Time: 40 minutes
Makes: 4 servings

For the meatballs
1 medium onion, chopped
400g turkey mince
1 crushed garlic clove
1 small apple, peeled and grated
1 tsp dried mixed herbs
salt and black pepper to season

For the tomato sauce
1 tbsp olive oil
1 medium onion, chopped
1 clove garlic, crushed
400g tin chopped tomatoes
3 tbsp tomato purée
2 tsp sugar
Splash balsamic vinegar
Splash worcesterhsire sauce
1 tsp dried Italian herbs
pinch dried chilli flakes

150g Cheddar cheese, grated
80g Parmesan cheese, grated
300g penne pasta

  • Pre heat oven to 180, 160 for fan ovens.
  • Heat the olive oil and add the chopped onion and garlic, cook until soft.
  • Place the grated apple, turkey, herbs, salt and pepper in a bowl and add the cooked onions and garlic.

  • Use your hands to bind the mixture together. Keep working the mixture for about 3 minutes to really bind the ingredients.
  • Use your hands to split and roll the mixture into balls and line them up on a baking tray.
  • Cook for 16 minutes and then add them to the tomato sauce.

  • For the tomato sauce
  • Gently heat the olive oil and add the chopped the onion and garlic. Cook until soft but not browned.
  • Add the balsamic vinegar, Worcestershire sauce, chilli flakes and Italian herbs. Cook for 2 minutes.
  • Stir in the tomato purée, sugar and chopped tomatoes. Cook on a low heat for 20 minutes.

  • The sauce and meatballs can be kept in the fridge until ready to use.

  • To assemble pasta bake:
  • Cook the pasta as per packet instructions, drain and then stir into the tomato and meatball sauce.

  • Put the pasta and sauce into a baking dish, sprinkle the chesses over the top.

  • Bake in the oven for 20 minutes until the top is golden and crunchy.
