Ingredients 2 hamburger rolls
½ kg kumara, peeled and cut into wedges
1 tbsp olive oil
275 g turkey mince
½ carrot, grated
½ green apple, grated
½ green apple extra, finely chopped
½ onion, grated
1 very small egg
¼ cup breadcrumbs
¼ cup walnuts, chopped
1 celery stalk, chopped finely
½ garlic clove, crushed
½ tbsp lemon juice
1 tbsp mayonnaise
1 piece lettuce
½ avocado, sliced finely
1 medium beetroot, peeled and grated
Preheat the oven to 180° fan forced. Place cut kumara in a saucepan and bring water to boil. Gently boil for about 5 minutes, or until par-cooked.
Drain, and pat dry with paper towel. Transfer to a baking dish lined with baking paper, toss the kumara with oil and season.
Bake for 30 - 35 minutes until golden brown.
While this is cooking, combine turkey mince, grated apple, carrot, onion, egg, breadcrumbs, and garlic in a bowl.
Using your hands, shape turkey mixture into 4 patties. Cover with plastic wrap and put in the fridge for about 10 minutes.
Combine celery, walnuts, chopped apple, mayonnaise, and lemon juice in a medium bowl and also put in the fridge until needed.
Heat a non stick frypan and spray patties with oil. Cook patties in batches for 4 - 5 minutes each side, or until cooked through.
Cut the rolls in half and put lettuce on the base. Top with the avocado and grated beetroot.
Top with a turkey patty, and the waldorf apple salad.
