Yakitori is grilled, skewered chicken, but it can generally refer to any skewered meat. I've substituted turkey for chicken, and once the turkey becomes 'food on a stick', meal times are more fun.

Ingredients
Half a red onion
Half a lemon
Sprigs of lemon thyme
1 courgette
Black pepper
2 garlic cloves
4 diced turkey breast pieces
Olive oil

Method
Dice the onion and garlic.
Add a teaspoon of olive oil to a frying pan and set it to a medium heat.
Add the onion, chopped garlic and thyme to the pan, leave to cook for 5 minutes.
Add the sliced courgette and turkey pieces to the pan.
Stir once and allow to cook for 10 minutes until the meat has browned.
Pour the yogurt into a small bowl, add the black pepper and one squeeze of lemon.
Stir the yogurt dip and garnish with some fresh corriander.
The meat should be a deep golden brown, and the onions and courgette should have caramelised somewhat.
Skewer the turkey on to metal/wooden skewers, or cocktail sticks if you're out of 'proper' skewers.
Plate up the vegetables alongside the turkey yakitori and serve with the yogurt dip for a healthy snack.
