Turkish Baked Rice Pudding

One of the things that Turkey is famous for is its wide selection of milk based desserts. Baked rice pudding, or "firin sutlac" in Turkish, is one of them. You can find it in any restaurants in Istanbul. Traditionally, this pudding is served in a small clay dessert cup. But since it is quite hard to get hold of, ramekin works just fine.

The beauty about this recipe is you do not need a long list of ingredients and most of them are very likely to be in your cupboard already. The best part - this marvelous dessert can be kept in the fridge for a week, and ready to be served whenever your sweet tooth is calling.

Preparation Time: 3 minutes
Cooking Time: 45 minutes
Makes: 4-6 servings

1/2 cup short/medium grain rice, washed and drained
1 cup water
2 cups milk
8 tbsp sugar
1 egg yolk, beaten
1 tbsp cornflour, heaping
1/2 tsp vanilla extract

Reserve 2-3 tbsp of the milk in a bowl. This is to be used with cornflour.

Place the drained rice and water into a pot. Put over high heat and boil rapidly.

Once boiled (when you see bubbles), turn heat down to medium-low and close the lid. Simmer till rice is cooked and there is some water left (around 5-8 minutes)

Add the rest of the milk and sugar into the pot. Stir.

Meanwhile, add cornflour into the reserved milk and stir until no lumps remain. This solution will thicken the pudding.

Add cornflour solution into pot and continuously stir until the mixture feels slightly thicken and bubbles start forming.

At this point, add vanilla extract and stir. Turn the heat down to low, and let simmer for another 2-3 minutes.

Using a ladle, pour the rice pudding into 4-6 ramekins, depending on the size. If you don't have ramekins, use any ovenproof bowls or glass.

Spread some egg yolk on top of the pudding with a spoon. Bake in 160c oven for around 10 minutes or until the top is golden brown.

Allow to cool slightly, cover with cling film and put in the fridge to cool for at least 1-2 hours before serving.
