Turmeric Rice with Peas and Zucchini
This is a great way to spice up your rice and add a few extra vegetables to your meal. It makes a delicious accompaniment for grilled meats, stir-fries and curries or a lovely light meal on it's own.

Cooking Time: 20 minutes
Serves: 4
Ingredients
1 c rice, basmati or jasmine
2 c vegetable stock
1 tsp. turmeric
1/2 tsp. cumin
1 bay leaf
1 tsp. minced garlic
1/4 tsp. cinnamon
1 small zucchini, grated
1/2 cup frozen peas, thawed
1 tbs. butter
fresh parsley
1/4 - 1/2 tsp. salt to taste
1 tbs. lemon juice to taste
Method
Add the butter to a saucepan and heat to medium - high heat.
Put in the spices and garlic and cook until bubbling and aromatic, about 2 minutes.
Add the rice and bay leaf, toast briefly until the rice is translucent and fully coated in the butter.
Pour in the stock and bring to the boil.
Turn the heat down very low, add the seasoning, stir, then simmer for 10 - 15 minutes until the liquid is almost all absorbed.
Stir in the peas, zucchini and parsley. Cover and allow to stand for 10 minutes.
Fluff the rice with a fork, add the lemon juice and serve.
