Turmeric Rice with Peas and Zucchini

This is a great way to spice up your rice and add a few extra vegetables to your meal. It makes a delicious accompaniment for grilled meats, stir-fries and curries or a lovely light meal on it's own.



Preparation Time: 10 minutes
Cooking Time: 20 minutes
Serves: 4

Ingredients
1 c rice, basmati or jasmine
2 c vegetable stock
1 tsp. turmeric
1/2 tsp. cumin
1 bay leaf
1 tsp. minced garlic
1/4 tsp. cinnamon
1 small zucchini, grated
1/2 cup frozen peas, thawed
1 tbs. butter
fresh parsley
1/4 - 1/2 tsp. salt to taste
1 tbs. lemon juice to taste



Method
  • Add the butter to a saucepan and heat to medium - high heat.
  • Put in the spices and garlic and cook until bubbling and aromatic, about 2 minutes.
  • Add the rice and bay leaf, toast briefly until the rice is translucent and fully coated in the butter.



  • Pour in the stock and bring to the boil.
  • Turn the heat down very low, add the seasoning, stir, then simmer for 10 - 15 minutes until the liquid is almost all absorbed.



  • Stir in the peas, zucchini and parsley. Cover and allow to stand for 10 minutes.
  • Fluff the rice with a fork, add the lemon juice and serve.
