I was really taken by these very cute tiny tomatoes called tomberries and have been grazing on them as a healthy snack and popping them into salads. Being small I thought they would be ideal added to a simple cheese tartlet. If you can't get hold of these, you can use regular cherry tomatoes and just slice the in half.

Makes: 2 servings

Tomberries
Ingredients
Ready rolled puff pastry (2 pieces around 15cm x 10cm)
25g cheddar cheese
20g goats cheese
8-10 tomberries
Dried Italian herbs
A little beaten egg
Method
Preheat oven to 200c fan forced.
Score around each piece of puff pastry, 1cm from the edge.
In the centre, layer over thinly sliced cheddar cheese.
Crumble goats cheese evenly over the top.
Sprinkle on some tomberries.
Sprinkle over some dried herbs.
Brush the outer edges with beaten egg.
Place on a baking sheet and cook in the oven for around 10-15 minutes until golden and the cheese has melted.
