Two Different Gozleme Pancakes
Gozleme is a delightful Turkish flat pancake type meal. It generally has a choice of about 4 fillings when you buy it.
I have made the dough from scratch, and you need to roll it out as thin as possible.
Preparation Time: 30 minutes
Cooking Time: 5 minutes
Serves: 4
Ingredients
For the pancakes
125 g plain flour
A bit less than 100 ml water at room temperature
½ tsp salt
For Gozleme with spinach
1 packet baby spinach
About 80 g feta, drained and crumbled
For Gozleme with chicken
Quantity of cooked chicken, shredded
Grated cheese
Broccolini - optional
Method
For the pancakes
Put the flour and salt in a bowl, and slowly add the water while kneading.
Knead the dough for about 5 to 10 minutes, or until it becomes smooth.
Form it into a ball, cover it with a damp paper towel, and let it rest for about 15 minutes.
Break up into smaller balls, and freeze if not needed.
When ready to use, roll out as thin as possible - can be frozen till then.
For the spinach and feta
Put the baby spinach and crumbled ricotta just to one side of the middle.
Fold the pancake right over in half and seal the edges.
Put in a sandwich maker to bake and flatten for a few minutes or until brown.
Cut up into smaller pieces and serve.
For the chicken gozleme
Add the cooked chicken to the middle of the pancake.
I used broccolini on top of that and then smothered it with grated Swiss cheese.
Fold the pastry over and seal the edges, and cook as above.
When they are cooked cut them up into whatever size you wish, and squeeze some lemon over them.
The thinner the pancake, the nicer gozleme will be.
I had a mushroom salad with the chicken gozleme.
