Two Ways to Use Eggs

I could eat eggs all day long, every day. One of my favourite foods, I like them done ANY way!

Here I have used avocados to go with the two egg dishes that I made.



Preparation Time: 15 minutes
Cooking Time: 40 minutes
Serves: 2 - 3

Ingredients
For the Avocado eggs
3 large hard boiled eggs, peeled
½ ripe avocado
¼ tbsp lemon juice
Bit of garlic powder
½ tbsp shallots or spring onions, chopped
1 tsp capers
Few strips of red capsicum - optional

For Avocado on toast
2 slices of bread
1 avocado, ripe
¼ lemon juice
2 - 4 slices shortcut bacon
2 tbsp maple syrup

Method
For the avocado eggs
  • Slice each egg in half lengthwise, and remove the yolks.

  • Remove the seed from the avocado, and cube.

  • in a bowl combine the avocado, mashed egg yolks, lemon juice and garlic. Mash it all to blend.

  • Stir in the shallots and capers.


  • Fill each egg with the avocado mixture.


  • Garnish with red capsicum strips (optional).

  • For the avocado on toast
  • Mash the avocado roughly and add the lemon juice. Season well with salt and pepper.

  • Cook the bacon until it is crisp -I did this in the microwave in between paper towel.

  • Toast the bread and divide the avocado mixture between the slices.


  • Top with the bacon slices, and then drizzle over the maple syrup to taste.

  • Serve.
