Upside Down Nut Cake

This very nutty cake has a goes well with a dollop of cream.

Preparation Time: 10 minutes
Cooking Time: 45 minutes
Serves: 6-8

Ingredients
90g pine nuts
90g walnuts
250g ground almonds
75g cream cheese
75g yoghurt
75g creme fraiche
3 eggs
3 1/4 tsp Truvia sweetener (or 125g caster sugar)
2 tsp baking powder

Method
  • Pre-heat the oven to 180 & #3872 ;C/ 160 & #3872 ;C fan/ 375 & #3872 ;F/ 5 Gas.
  • Place 30g pine nuts and 30g walnuts at the bottom of a greased savarin tin.

  • Beat all the other ingredients together and spoon the mixture over the top of the nuts.

  • Bake for 45 minutes, allow the cake to cool, and then turn out of the tin.
