Upside Down Nut Cake
This very nutty cake has a goes well with a dollop of cream.
Preparation Time: 10 minutes
Cooking Time: 45 minutes
Serves: 6-8
Ingredients
90g pine nuts
90g walnuts
250g ground almonds
75g cream cheese
75g yoghurt
75g creme fraiche
3 eggs
3 1/4 tsp Truvia sweetener (or 125g caster sugar)
2 tsp baking powder
Method
Pre-heat the oven to 180 & #3872 ;C/ 160 & #3872 ;C fan/ 375 & #3872 ;F/ 5 Gas.
Place 30g pine nuts and 30g walnuts at the bottom of a greased savarin tin.
Beat all the other ingredients together and spoon the mixture over the top of the nuts.
Bake for 45 minutes, allow the cake to cool, and then turn out of the tin.
