Upside Down Strawberry Cake

This delicious, fun and pretty upside down strawberry cake is a great dessert. The strawberries cook with the cake and make a delicious tasting top that you can either make sweet or tart. Dust with icing sugar, place fresh strawberries on top and serve with whipped cream or ice cream.

Serves: 1
Ingredients
1/4 cup brown sugar (optional)
250g strawberries (reserve 2 for the top of the cake if desired)
1/2 cup butter (or nuttelex if lactose free)
1 cup sugar
2 eggs
1/2 cup milk (lactose free if required)
1 tbsp vanilla essence
1 3/4 cups flour (gluten free if required)
1 1/2 tsp baking powder
Icing sugar, to dust
Cream or ice cream, to serve (optional)
Method
Preheat the oven to 180 degrees and line a round cake tin with baking paper.
Sprinkle the brown sugar evenly over the base of the cake tin. This step can be excluded if you prefer a tart tasting cake.
Cut the strawberries in half longways and place them cut side facing up in the bottom of the cake tin so the pan is covered. I placed the strawberries in a ring around the edge of the cake tin and then filled the middle.

Beat the butter and sugar in a bowl for 2 minutes until pale.
Add the eggs, one at a time, and beat to combine. Add the vanilla essence and milk, beat to combine.
In a separate bowl whisk the flour and baking powder until combined.
Add the flour mixture to the wet ingredients gradually and stir until just combined. Take care not to overwork the batter.
Pour the batter evenly over the strawberries and bake for 30-35 minutes, until a skewer comes out clean.

Take the cake out of the oven, place on a wire rack and allow to cool in the cake tin for 5 minutes.
Remove the cake from the tin, peel off the baking paper and pour any syrup on top of the cake.
Dust the cake with icing sugar, place 2 cut strawberries on the centre and serve with whipped cream or ice cream. Enjoy!
Tips
This cake looks spectacular with a whipped cream swirl on top.
This cake is delicious with blueberries placed between the strawberries.
