Upside-down Peach Cake

Hi everyone, here is a simple recipe for upside-down peach cake. Tastes really nice especially when served warm! I liked to use the ramekin because its size is a perfect serving for one person. Alternatively you can use a larger cake pan, it works the same however you would need to line the bottom of the cake pan instead of greasing and sprinkling with sugar.

Preparation Time: 10 minutes
Cooking Time: 45 minutes
Makes: 4 servings

50g 100g butter, softened
1/2 cup brown sugar
2 cups sliced peaches (canned or fresh)
3/4 cup sugar
1 egg
1 tsp vanilla extract
1 cup plain flour
1 tsp baking powder
1/4 tsp salt
1/2 cup milk

Preheat oven to 180°C.
Melt 50g butter and brush 4 ramekins with the butter.
Sprinkle with brown sugar and arrange the peach slices in a single layer over the sugar.

In a large bowl beat the sugar and 100g butter until light and fluffy.
Add in the egg and vanilla extract and beat until smooth.

Combine the flour, baking powder salt and milk and continue to beat until all ingredients are mixed well.
Spoon in to the ramekins and bake for 45 to 50 minutes or until a toothpick inserted comes out clean.
Allow the cake to cool for 10 minutes before inverting onto a plate.

9. Serve as is or decorate with fruits such as blueberries, raspberries etc.
