Vanilla and Coconut Ice Cream
A slight twist of a summer favourite cool down.
Preparation Time: 15 minutes (plus freezing time)
Cooking Time: 5 minutes
Makes: 3 servings
Ingredients
300ml creme fraiche
75ml coconut oil
1 tbsp vanilla extract
7 eggs
6 tbsp Truvia sweetener (or 275g caster sugar)
Method
Place a freezable container in the freezer.
Gently heat the creme fraiche with two tablespoon sweetener/100 g sugar, and then stir in the coconut oil.
Remove from the heat and allow to cool.
Separate the eggs and beat the yolks with the remaining sweetener/sugar.
While whisking, gradually pour the creme fraiche mixture into the yolks.
Return the mixture to a low heat for a few minutes.
Dip the saucepan in cold water to stop the cooking process.
Take the container out of the freezer and pour in the mixture.
Put the ice cream in the freezer for about eight hours, taking it out every hour or so to stir.
