Vanilla and Coconut Ice Cream

A slight twist of a summer favourite cool down.

Preparation Time: 15 minutes (plus freezing time)
Cooking Time: 5 minutes
Makes: 3 servings

Ingredients
300ml creme fraiche
75ml coconut oil
1 tbsp vanilla extract
7 eggs
6 tbsp Truvia sweetener (or 275g caster sugar)

Method
  • Place a freezable container in the freezer.



  • Gently heat the creme fraiche with two tablespoon sweetener/100 g sugar, and then stir in the coconut oil.
  • Remove from the heat and allow to cool.

  • Separate the eggs and beat the yolks with the remaining sweetener/sugar.



  • While whisking, gradually pour the creme fraiche mixture into the yolks.

  • Return the mixture to a low heat for a few minutes.



  • Dip the saucepan in cold water to stop the cooking process.



  • Take the container out of the freezer and pour in the mixture.



  • Put the ice cream in the freezer for about eight hours, taking it out every hour or so to stir.
