Vanilla Cake with Mulberries
For this recipe, I have taken a basic vanilla cake recipe and added some fresh mulberries to the cake for something a little different.

Ingredients
120 g white sugar
125 g butter
2 eggs
2 teaspoons vanilla essence
180 g plain flour
1 3/4 teaspoons baking powder
120 mls full cream milk
200 g fresh mulberries
1 tablespoon of icing sugar
Method
Preheat your oven to 180 degrees Celsius or 160 degrees Celsius fan forced.
Grease and flour a 23cm x 23cm cake pan.
Wash the mulberries, cut off the stems and place them around the base of the cake tin.
Place the mulberries in the bottom of the cake pan
In a medium bowl, mix together the sugar, vanilla and butter.
Beat in the eggs, one at a time. Combine flour and baking powder, add to the creamed mixture and mix on low speed adding in the milk as it mixes. Mix until the batter is smooth.
Pour the mixture into the prepared pan.
Pour cake mixture over the mulberries and smooth the top
Bake in preheated oven for 30 to 40 minutes.
Remove form the oven and allow to cool before turning out upside down. Dust with icing sugar before serving.
