Vanilla Crackle Cookies

I've named these cookies, crackle cookies, due to the effect created once they are baked. It's a favourite recipe to make with my kids as they are quick and easy to make. The original recipe was to place balls on a baking sheet and I think they were meant to spread out on their own. However, part way through baking the first time we made these, they were still balls so we gave each a gentle flatten which created the crackle effect. Now we make them the same way each time.



Preparation Time: 10 minutes
Cooking Time: 15 minutes
Makes: 12 servings

Ingredients
90g soft butter
25g icing sugar
25g golden caster sugar
1 egg yolk
1 tsp vanilla extract
150g plain flour

Method
  • Preheat oven to 180 degrees C (fan oven).
  • Mix the butter, icing sugar, caster sugar and egg yolk together until well combined.



  • Stir through the vanilla extract.
  • Add a little flour at a time and mix through until all has been added. It should start to form together and be easy to mould.



  • Divide the cookie dough into 12 sections.
  • Roll them in your hands into balls.
  • Place on a baking tray, leaving space between each ball.



  • Bake for 10 minutes.
  • Remove from the oven and flatten each one down slightly and you'll see some cracking that gives the lovely crackle effect.



  • Place back in the oven and bake for a further 5 minutes until golden and delicious.
